Walter's on the Beach: Carbis Bay Hotel

Walter’s on the Beach is The Carbis Bay Hotel’s latest edition to the Estate. After a major revamp before the G7, the Carbis Bay Hotel has been turning heads for more reasons than just the union of leading democracies. As well as Ugly Butterfly, Adam Handling’s restaurant, the Estate also opened its doors to Walters on the Beach, a sophisticated, yet chic beachside restaurant taking Cornish glamour to the next level.

Showcasing dark, yet dominant interiors, Walter’s on the Beach is a complete contrast to your expected beachside restaurant. Forget baby blues, and white-washed wall decor, Walter’s has changed the game and created something that we’ve not yet seen in Cornwall. Walter’s is the definition of escapism; it’s moody but oozes energy, a different class.

The menu is a combination of international dishes as well as classic British flavours developed by head chef Andrew Houghton. Ellie and I both decided to go for a Pornstar Martini and Cosmopolitan whilst we made the toughest decision of the day; what food to order from the menu. Walter’s offers possibly the best cocktails this side of London, there’s truly no wonder that their theatrical boozy drinks are already celebrated far and wide despite only being open for a matter of months.

For starter, Ellie opted for the King Prawns with Wasabi, Sortet + Cucumber and I went for the Thai Chicken + Fish Cakes. Both dishes were absolutely beautiful, not only in taste but presentation too. For our main course, Ellie tucked into the Cauliflower Steak and Creamed Potato, whilst I swooned over the Korean Chicken, Kimchi + Sticky Rice. Again, the presentation was outstanding and each dish was delivered uniquely, making the whole experience completely unexpected.

For dessert, we decided to share a Lemon Tart alongside a beautiful Provence Rose wine. We finished the meal off with a cappuccino as we watched the waves roll in and the darkness of a storm sweep over Carbis Bay. After lunch, we were shown the way to the new C-Bay Spa ~ a completely exhilarating experience that deserves a dedicated blog post (coming soon.)
